What is Poké?

“Poké / po ke / is a raw fish salad served as an appetizer in Hawaiian cuisine, and sometimes as an entree. Poke is the Hawaiian verb for “section” or “to slice or cut”. Traditional forms are aku (an oily tuna) and he’e (octopus). He’e (octopus) poke is usually called by its Japanese name “Tako” poke, except in places like the island of Ni’ihau where the Hawaiian language is spoken. Increasingly popular ahi poke is generally made with Yellowfin tuna. Adaptations may feature raw salmon or various shell sh as a main ingredient served raw with the common “poke” seasonings.”

Lemon Shark

A.K.A. Negaprion Brevirostris

Unlike other sharks, the lemon shark is a discerning feeder.

Whereas other sharks feed on any prey that crosses their path, the lemon shark will only dine on the best fish it can find. Fish that are the healthiest, and of a certain maturity. Fish that are, quite simply, only the best.
All others swim by the lemon shark for safety.
Inspired by the discerning lemon shark, we create poke with only the finest line-caught fish available. And with perfect cuts, we create dishes that are as unique and special as the lemon shark itself.

Here at LemonShark Poke we are confident about the quality of food we serve and are gratified to share the details with you:

All our Tuna is Line Caught by hand from the Pacific Ocean and is rated #1 USA Sashimi Grade. The standards and specs of our Tuna exceed USFDA standards and are triple graded – on boat, at port, and at facility.
This can only be done if tuna is processed fresh.

OUR SALMON

Our Salmon is MSC chain of custody certified, purchased from Best Aquaculture Practices (BAP) certified producers with complete traceability from boat or farm to delivery.

We have worked closely with FishWise for over 6 years, a non-profit organization focused on market-based approaches to marine conservation, to apply the Monterey Bay Aquarium’s Seafood Watch program ranking to inventory. We are also partners with the Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC), which operates the most rigorous and widely recognized certification programs in the world for sustainability and environmental responsibility in the wild=capture fisheries.
